This is one of my family’s favorite Mediterranean-inspired summer dinners. The fresh, light flavors really pop, and because it is so wondrously light, it doesn’t sit heavy or become hard to heat on those deliriously warm summer days when nothing sounds good. The combination of fats in the feta burgers and crisp salad flavors in the Greek salad? It doesn’t get much better than this!

FETA BURGERS AND GREEK SALAD

Ingredients
Feta Burgers
- 1 pound lamb ground
- 1 red onion chopped
- 1 clove garlic minced
- 1 tablespoon mint fresh chopped
- 1 teaspoon oregano dried
- 1/4 teaspoon cumin ground
- 1/4 teaspoon coriander
- salt to taste
- black pepper to taste
- 1/2 cup feta cheese crumbled
- 1 tablespoon ghee
Greek Salad
- 1 cucumber sliced
- 10 ounces tomatoes sliced
- 1 green pepper sliced
- 1 red onion sliced
- 3/4 cup feta crumbled
- 16 olives pitted

- 2 tablespoons capers drained
- 1 teaspoon oregano dried
- 1/4 cup olive oil
Instructions
- We'll start by making the burgers. First combine all of your burger ingredients but the feta and ghee in a bowl, using your hands to mix well before diving into 4 parts. Flatten each until they are roughly 1/2-inch thick. In the middle of each patty, place 1/4th of your feta, folding the patty over the cheese. Press down to seal, shaping your patty so the feta is sealed in the center. Cook in a hot pan greased with the ghee over medium-high heat, roughly 5-6 minutes each side. Once done, set aside where they can stay warm but will not keep cooking.
- Meanwhile, prepare your salad. Place all of the salad vegetables in a bowl, adding the crumbled feta, olives, capers, and oregano, before drizzling with olive oil and serving with your feta burgers.
