MUG EGG MUFFINS

- 2 Eggs
- 2 ounces cooked spinach or other greens of choice
- 1 tablespoon softened butter
- salt to taste
- pepper to taste
- 2 ounces goat cheese
- 1 tablespoon chives fresh (or substitute with spring onions)
- Ready for how simple this is? Put all your ingredients in an oven-safe mug, making sure it is no more than 2/3rds full, stir, and cook on high in the microwave 2-3 minutes, checking every minute or so to make sure your mug isn't overflowing. That's it!
