Breakfast Sausage

 

When it comes to breakfast sausage, most store-bought patties are full of extra preservatives and chemicals. That’s hardly what you want when you’re on a clean keto diet, so here’s an easy way to make your own. Even better, you can readily make them in big batches, then freeze and reheat when needed. I especially love them with breakfast greens (such as kale, collard greens, or chard) or with avocado and cheese.

  1. In a large bowl, combine your ground pork and seasonings, using your hands to really mix well.
  2. With your hands, form the mixture into 12 small patties. As you do, allow the bacon fat to warm in a frying pan over medium-high heat before frying the patties in batches, giving them 4-5 minutes per side. Be careful not to flip them too early, as they're liable to stick if they don't have that crust built up yet.
  3. Season additionally if so desired, and serve with desired additional sides. Otherwise, if you wish to keep for later, let them cool to room temperature before storing; they'll last up to 5 days in the fridge or up to 3 months in the freezer.
Recipe Notes

As with many of these recipes, feel free to experiment a little with your seasoning blend to find what works for you, and when you find your desired preference, it's certainly worth making big batches and then freezing what you don't need right then for that meal. They can be readily warmed straight from the freezer, so making them in larger batches can save you significant time later.
