Keto Creamy Lime and Avocado Bars

Are you a fan of those sweet and tart and utterly smooth citrus bars you can find from your favorite coffee shop or bakery?? Oh me too and that’s why I love these so much! These lime and avocado bars are absolutely delicious, everyone will want a taste. Some people assume that the avocado might make the taste weird but it actually just gives the perfect texture, creaminess, and hearty appeal. The lime is really what stands out and the crumbly crust.

Make these for the kids when a sweet treat is needed- I am betting they will eat them up. Use different nuts as desired for a unique flavor or sprinkle a little on the top for some extra crunch.

Instructions
  1. Gather all your ingredients while preheating the oven to 350 degrees Fahrenheit. Line an 8x8 square baking dish with parchment paper, ensuring that parchment paper comes up on the sides as well, which will make it easier to pull the bars out when they are done later.
  2. Pulse all crust ingredients in a food processor until you have a coarse texture, then pour your mixture into the parchment-lined baking dish, making sure to get crust well into the corners.
  3. Bake your crust for 13-15 minutes, or until the edges start to brown. While the crust may appear under baked in the middle, be sure not to over bake it.
  4. Place all filling ingredients but the 1 tablespoon of lime juice into a large mixing bowl; beat well with a hand mixer until you have a smooth and creamy consistency.
  5. Spoon the mixture into your pre-baked crust, taking care to smooth it over once in the crust.
  6. Finally, gently add the last tablespoon of lemon juice to the top, taking care to let it cover the filling. This will help prevent browning.
  7. Refrigerate for at least one hour, if not several hours, to let flavors set and your filling firm. When ready to serve, pull out gently with the help of your extra parchment paper, then cut into squares.

RECIPE NOTES The lime juice on top of your filling is important, as avocados naturally brown, but the lime juice helps prevent that from happening. So if you want your lime avocado bars to keep their beautiful green color, the lime juice is key.
