Ingredients
- 2 tablespoons bacon fat or butter
- 1 onion white or yellow, chopped
- 1 green bell pepper sliced
- 1 pound ground turkey
- 1 teaspoon chili powder
- 1 teaspoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup tomato paste unsweetened
- 1 1/2 cups tomatoes canned or fresh, chopped
- salt to taste
- pepper to taste
- 16 ounces lettuce or a whole head, depending on lettuce cup preferences
- 2 spring onions sliced
- 1/4 cup olive oil
Instructions
- Start by greasing a large pan with your bacon fat over medium-high heat, before adding your onion and green pepper once hot. Cook 2-3 minutes, stirring occasionally. Add your ground turkey, chili powder, Dijon mustard, and vinegar, cooking until the turkey is browned, 7-8 minutes. Add your tomato paste and chopped tomatoes, and bring to a boil, before reducing heat to medium and cooking an additional 8-10 minutes, until thickened to preference. Season with salt and pepper to taste before removing from heat and letting cool 5 minutes.
- Serve atop lettuce leaves, sprinkling with spring onions drizzled with olive oil. If storing your mix, refrigerate for up to 3 days or freeze for up to 3 months.
